After the December over- indulgence, you may be left feeling a little lethargic. January doesn’t have to be the dreaded ‘New Year new me, new diet, no sugar, no carbs, no anything nice’ month. You can enjoy creating delicious meals and snacks that will help fuel you through January and compliment your training. Your meal prep doesn’t have to be boring, add fruit and a little seasoning to certain dishes to intensify flavours – you’ll be excited for your next meal.
Chopped sweet potato chunks with sprouts sautéed in coconut oil, cranberries, sunflower seeds and chives topped with rainbow trout fillet. Quick and simple to prepare, freezable too so you can enjoy the same meal the following week.
- 1 sweet potato, chopped into chunks and either steamed or roasted
- Sprouts halved and washed then either steamed or pan fried with 1 tbsp butter (coconut oil is another alternative)
- 1 tbsp sunflower seeds
- 1 tbsp dried cranberries
- Finely chopped chives (
- A pinch of salt and pepper
- 1 rainbow trout fillet
Alternatively you could use chicken or turkey; if you’re a vegetarian then you could swap the meat for extra greens such as ‘soya beans’ to ensure you’re getting enough protein in the meal. You can also add a few extra sweet potato chunks and sprinkle flaxseeds over the dish.
